One thick slice of hickory smoked rib eye, pressed in spicy cajun seasoning, blackened in an iron skillet, just like mama did, and served on a grilled french roll with a slice of blue cheese butter.

A medley of fresh vegetables sauteed in just a pinch of olive oil, white wine and Cajun seasoning with garlic and shallots; rolled in a grilled tortilla with red beans and rice and jack cheese.

TURK-A-DOODLE
Once tried to cross my female turkey with a rooster, but she wasn’t none too impressed. Name stuck, though. Slow smoked turkey breast, sliced thin and rolled with spiced mayonnaise, lettuce, tomatoes, bacon and Monterey Jack cheese into a grilled tortilla.

PULLED PORK SANDWICH
Some folk like it fast and sloppy, and this is. We hickory smoke pork shoulder for twelve, sometimes fourteen hours, then simmer it in our house BBQ sauce for another hour or two before it lands on a grilled bulky roll and gets served to you.

SMOKED CHICKEN SALAD ROLL UP
Hickory smoked chicken breast salad rolled with tomatoes, onions, lettuce and sprouts into a grilled tortilla. Oh, you’ll like it, all right.
